
Bruschetta with grilled peppers
Ingredients (4 servings):
• 4 thick slices of wheat bread
• 3 raspberry tomatoes
• ½ red bell pepper
• ½ yellow bell pepper
• ½ green bell pepper
• 2 cloves of garlic
• 3 tablespoons of olive oil
• Several basil leaves
• Salt and pepper
Wash the tomatoes and cut them into small cubes. Toss them in a bowl, pour in the olive oil and finely grate the garlic. Add chopped basil. Sprinkle with salt and pepper and mix thoroughly.
Grill the bread slices on a grill pan or regular pan.
Cut the peppers into long strips and grill.
Drain the tomato salsa and place it on the baked bread. Toss the grilled peppers in the salsa juice and mix. Next, lay them on the bread slices with the salsa.
Place the bruschettas in an oven preheated to 190°C and bake for 6 minutes. Serve drizzled with olive oil.
