Champignons
Champignons are aromatic domestic cultivated mushrooms. Few people know that Poland is the EU's leading producer of them. Fresh champignons are commercially available all year round for 12 months. Their appearance, taste and smell are always the same, regardless of the season.

Champignons are grown in special halls with strictly controlled conditions. They are picked by hand, quickly cooled and then packaged and shipped to the recipients. You do not need to peel the champignons, they just need to be rinsed of any remaining soil to make them suitable for the preparation of the dish. It is interesting to note that these mushrooms can be eaten raw.
Did you know that champignons contain vitamin D2? It is a vitamin very similar to vitamin D3, which is found in butter or fish. In addition, mushrooms also provide small amounts of folic acid, magnesium, B group vitamins and vitamin C.
SPECIES
White champignons
These are by far the most popular of these mushrooms - smooth white caps, sold before they have even developed and exposed their dark lamellae. Collected in various sizes from those not exceeding the size of a 1 PLN coin to those the size of a matchbox. You can use them for a wide range of purposes, which is appreciated by consumers.
Brown champignons
Rather large hats with a characteristic brown colour. They are more aromatic than their white cousins, although much less popular. Their use does not differ from the white champignons. Due to their intense aroma, they are recommended for sauces, soups and pasta dishes.
Portobello champignons
Their hats are white and really big, often about the size of saucers. These mushrooms are best for stuffing, grilling or roasting whole.

Poland is a leading producer and exporter of champignons on the EU market. Many mushroom crops can be found in the south-eastern part of Mazovia. Champignons are also produced for example in Mazury.
